Models and their balanced breakfasts
Valentina Zelyaeva's three morning favorites
Oats with a twist
"Purely Elizabeth are my favorites, oats blended with quinoa, amarante, chia and all kinds of other seeds. I cook them in milk for no more than two minutes, then I add cherries straight from the freezer - almost frozen but not quite - not just for the flavor but also the hot/cold contrast. Finally, I add a teaspoon of honey."
Sourdough toast
“I mainly find this in hotels, it's far and away my favorite healthy breakfast solution for avoiding blood sugar spikes. First eaten in Egypt, levain-based sourdough toast is easily digestible thanks to a high level of lactic acid. To avoid the mid-morning slump, I have a slice of sourdough toast and a Greek yoghurt, with a small handful of almond granola and fresh blackberries."
Monday morning green juice
"There's nothing like a green juice to get the week off to a healthy start. Throw in two cucumbers (peeled if not organic), half a head of fennel, two apples, kale and a quarter of a lemon (not peeled) to your GreenStar or Omega juicer and drink on the way to your first appointment."
"My favorite breakfast at home, is a seven-portion vegetable plate with kale, broccoli, quinoa, avocado, beets, sweet potato and cherry tomatoes. It's also great for lunch, an afternoon snack and before a busy evening."
"To keep myself going until lunchtime, I have a big bowl of milk for breakfast, with strawberries and blueberries for vitamins and a big handful of nuts so I don't snack."
"A white omelet with fresh spinach, tomatoes and mushrooms, with plenty of spicy sauce. Eat with blood oranges for a real vitamin kick."
Jacquelyn Jablonski's vegetarian brunch
“My quick breakfast recipe, is a big bowl of quinoa, with chopped squash, broccoli, chickpeas, yellow beets and avocado. If I have a little more time, I go for lentils mixed with shitake mushrooms and onions, that I season with pesto. Finally, I add a soft-boiled egg and roast yam on top."
Danielle Copperman's soft breakfast pancakes
"First, I blend up two bananas, then I add six eggs. Still mixing, I add two teaspoons of chia seeds, one of maca, cinnamon and a cup of desiccated coconut. To cook, I heat a little nut oil in a frying pan and form three thin pancakes, that I cook for no more than two minutes each side. If you need to sweeten, use honey or agave syrup."
Doutzen's power smoothie, by her sister Rens Kroes
"In a blender, mix up a banana, the juice of one lemon, the juice of an orange, a teaspoon of cinnamon, another of maca and one of protein powder. Add a good glug of almond milk, mix and drink. Natural Guronsan guaranteed!"
Anna Selezneva's homemade porridge
"Creamy buckwheat, a little pink Himalayan salt, a few dates and some organic lemon zest, with a tablespoon of coconut oil and fresh berries. And to sweeten it all, a little honey."
